Anyone here a lover of hot pot/nabe dishes?
I tend to use mushroom or tomato stock and just throw everything I fancy in there. Any hot tips for a delicious combination? *drool*

@kari

I cant say that I LOVE pot. I'm more of a catnip type of cat. However, when I do partake in pot i get rhe muchies. Thats when i would crave things like hot pot.

I enjoy my hotpot with a variety of magic mushrooms. Enoki mushrooms are some of my favorite! Oyster, shiitake, and cremini are cool too. I often get the munchies and throw some spices, various sauces depending on what im craving (fish, hoisin, siraracha, soy, etc), tofu in various forms (soft, firm, sheet, fried), meat/fish balls and cakes, baby bok choi, chives, garlic, various cuts of meat, watercress, diakon, spinach, cabbage, sometimes cuts of tomatoes. Add in some vermicelli, rice, and dumplings for something more filling.

But I'm no catnoisseur. @booster is professionally trained in the culinary arts and can provide better input.

Also, lay off the taxes. I think you have an addiction to doing them. This is an intervention.

vegetarian? if not, you can do a quick prawn head stock and then combine it with your usual mushroom or tomato stock. it takes around 15 mins to render the prawn heads. if youre lazy you can cheat and just buy those premade stock satchels (aka msg :P) in asian groceries.

if vegetarian, you can try adding some miso?

imo home hot pot/nabe is usually a light meal. it makes sense to build on top of a simple stock like a mushroom or tomato stock. throwing protein in there (not too lean) is enough to give you the oomph.

I'm more of a matatabi cat, myself.

All of that sounds delicious!

Sometimes vegetarian, most of the time without fish or too spicy. All depends on the other cats in the room. Adding Miso sounds like a good idea!
