Redwine cookies

for the dough:
250g sugar
1 egg
250g butter
6 tablespoons red wine
2 tablespoons coca powder
2 level teaspoons cinnamon
500g flour
3 level teaspoons baking powder

for the filling and decoration:
400g raspberry jam
150g dark chocolate couverture
25g coconut fat
80g ground almonds

how to:
1) Mix all ingredients for the dough well until you get a smooth dough.
If it's still too sticky, wrap it if foil and put it in the fridge for about 30 minutes.
Dust your working surface with flour and roll the dough until it's about 3mm.
Cut out round biscuits and put it in the oven (150-175°C) for about 10 minutes.
Let them cool off on a cooling rack.

2) Melt the couverture with the coconut fat in a double-boiler.
Then spread the jam inbetween two cookies - don't use too little, just so much that the cookies won't be dry when eaten and that the jam spreads to the edge.
Coat the edge with the melted chocolate and roll the cookies in the ground almonds until the chocolate is covered.
Let the cookies dry. Voila.


Pudding cookies


for the dough:
250g butter
75g powdered sugar
1pck vanilla sugar
260g flour
150g custard powder (decides the flavor of your cookies)
1 tablespoon milk

how to:
Mix the ingredients well until the dough won't stick to the bowl anymore.
Use a teaspoon or a fork to form the cookies and put them in the oven (175°C for about 10-15 minutes). Don't let them get too dark.
Leave them on a cooling rack - be careful, fresh out of the oven, they tend to break easily.

info: instead of milk you can use any liquid in order to change the taste, e.g. chocolate custard powder and amaretto, vanilla custard powder and lemon/orange/apple/... juice, chocolate and coffee etc.

Even though these are 'healthier' versions, they still look amazing. Im definitely going to try a recipe out for Christmas!
